NB! Make sure you have clean 5V supply for the OSD. Text disappearing on full throttle and sharp maneuvers is common symptom with modern fast ESCs with powerful brake. Braking ESCs generate ripple in voltage which the MAX7456 is sensitive of. To fix this add a capacitor to 5V rail, a small tantalum for example.
